Arosto- East Africa Roast Lamb- Dinner
Ingredients
- 1.5kg Choice Meats Halal Lamb
- 1 teaspoon of black pepper
- 1/4 teaspoon of cloves
- 1/2 teaspoon of nutmeg
- 1 teaspoon of turmeric (for color)
- 1/2 teaspoon of cardamom
- 1.5 teaspoons of alt
- 1/4 teaspoon of cinnamon
- 2 tablespoons of oil (for marinating).
Instructions
- Prepare the Spices: Grind or mix all the dry spices (black pepper, cloves, nutmeg, turmeric, cardamom, salt, and cinnamon).
- Marinate the Lamb: Place the cut lamb pieces into a bowl. Add the mixed spices and a drizzle of oil.
- Mix Thoroughly: Use gloved hands to rub the spice and oil marinade completely into the lamb pieces until fully coated.
- Transfer to Pan: Place the marinated lamb pieces into a baking dish or tray.
- Bake: Cover the pan tightly with aluminum foil and place it into a preheated oven.
- Uncover & Finish: Remove the foil when done (Arosto is essentially a slow-roast, so this will take several hours at a low temperature) and allow the meat to brown slightly.
- Serve: Plate the AROSTO over preferred rice and garnish with fresh salad and vegetables
